Grape Yeast Water

My Yeast Water, so pretty in purple. Korea has this distinctive red grapes with very thick skin and deep flavor. 葡萄を発酵させたフルヌツむヌストりォヌタヌ(䜕ず蚳す果物酵母氎)。


It’s tasty the way it is but also ferments really well without any added sugars.

October is the season so I make a jar of this yeast water which I use for feeding my sourdough starter once in a while throughout the year. The water-only starter is a bit too sour for my family’s taste, the grape yeast adds a hint of fruitiness to our favorite bagels. Afterall, we’re the picky New Yorkers!
