Grape Yeast Water 葡萄の酵母水


My Yeast Water, so pretty in purple. Korea has this distinctive red grapes with very thick skin and deep flavor. 葡萄を発酵させたフルーツイーストウォーター(何と訳す?果物酵母水?)。

It’s tasty the way it is but also ferments really well without any added sugars.

October is the season so I make a jar of this yeast water which I use for feeding my sourdough starter once in a while throughout the year. The water-only starter is a bit too sour for my family’s taste, the grape yeast adds a hint of fruitiness to our favorite bagels. Afterall, we’re the picky New Yorkers!
