Fermented Vegetable: Japanese TSUKEMONO

Do you recognize which vegetable is this TSUKEMONO made with?

Cucumbers are boys’ favorite fermented veggie, however, these few years it’s very hard to find good cucumbers in Seoul. We don’t know why, the taste is bitter and the texture is very soggy.

I tried this because I needed to come up with a replacement but honestly, this solution came out more than expected. It tastes much better, is crunchy, and costs nothing extra!
