Do you recognize which vegetable is this TSUKEMONO (Japanese fermented vegetable) made with?

These few years it’s very hard to find good cucumbers, we don’t know why, the taste is horrible and texture is soggy.

As cucumbers are boys’ favorite fermented veggie, I needed to come up with a new idea. Honestly, this solution came out more than expected, it tastes much better, crunchy, and costs nothing extra!
